Tomato Crisp with Coopers Crumbs

My favorite side dish turned healthy and even more delicious that I could have imagined.

Ingredients: 1 box cherry tomato’s
1 cup Italian Coopers Crumbs
1/2 cup Cayenne Coopers crumbs
5 cloves garlic, crushed
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp oregano
1/2 teaspoon cayenne
1 tsp pepper
1-2 tablespoons olive oil
Instructions:
Place washed tomato’s in an oven safe dish. Drizzle a very little bit of olive oil over the tomato’s and mix until the dish and the tomato’s are coated.
In a bowl, add the crumbs, the seasoning, the garlic and the olive oil. Start with one tablespoon and add as you need. It should be an almost pasty mixture that comes together but is not overly oily. Once mixed, distribute evenly over the tomato’s, making sure to get every crevice and corner is the dish.
Place in the oven at 375 for about 20 minutes, checking on it periodically. The crisp should be crispy on the top and the tomato’s should have softened and burst their juices into the dish.
Serve hot and enjoy the healthier alternative to a delicious side dish.
