Crispy Firecracker Spring Roll Bites 🧨

If you’re looking for a recipe with simple steps but a bang when it comes to flavor, look no further. This recipe is filled with nutritious components and the sauce adds a delicious umami bomb to go with it. I hope you give it a try!

Ingredients:

2-3 chicken breasts

3 scallions, chopped into 1 inch pieces

Mushrooms, sliced

Jalapeño, sliced (optional)

Cilantro or parsley

Rice paper, cut in half

Water

Salt and pepper to taste

2 tbsp soy sauce

2 tbsp sesame oil

2 tbsp rice vinegar

2 tbsp brown sugar

1 tbsp mirin

Sesame seeds

Directions:

Start by seasoning your chicken with salt and pepper. Place the chicken in a frying pan at medium high heat with a little oil. Flip and cook through. Remove from the pan and cut into cubes/bite size pieces.

Place the scallions into the pan and sauté just until you get some softening and some browning/char on the scallions.

Take a bowl and fill it with warm water. Dip your rice wrappers into the warm water, moving it around until it starts to get softer. Place the wrapper down on the counter and start compiling your firecrackers!

Layer your jalapeño (if you choose), mushrooms, your chicken, the scallions, cilantro/parsley. Then, wrap it up like an eggroll, until all the filling is inside the little pocket.

Place your firecracker bites into a frying pan on medium high heat with some neutral oil (avocado, canola, vegetable). Allow to get crispy and flip after ~2 minutes. Repeat on the other side and remove from the pan. Repeat with the remaining firecracker bites.

To make the sauce, add the soy sauce, sesame oil, rice vinegar, mirin, brown sugar, sesame seeds and some more cilantro/parsley into a bowl and mix.

Serve the firecracker bites with the sauce and enjoy!
