Crispy Tofu Nuggets w/ Chipotle Ranch Sauce

If you like tofu, this is a real winner! They are hot, cripsy, full of flavor and so verastile. You can put these in a taco, in a salad, or just eat them plain. Either way, ifyou’re into tofu, make this recipe!

Directions:
2 packs extra firm tofu
3 eggs
1 cup tofu
1-2 cups panko crumbs
olive oil
3 Tbsp onion powder, garlic powder and paprika
2 Tbsp chili powder
2 tsp salt
Pepper to taste
1/3 cup mayo
1/4 cup sour cream of choice
2 Tbsp chipotles in adobo sauce, the sauce only
1/2 lime, juiced
3 cloves garlic, crushed
1 tsp garlic powder

Preheat your oven to 400 degrees.
Start by pressing and drying your tofu. Then, cut them into nugget strips, or whatever shape you want.
In a bag, add your flour with 1 tsp salt, 1 tsp chili powder, pepper and 1.5 Tbsp of onion powder, garlic powder and paprika. Shake around and add your tofu. Shake again to coat the tofu in the flour.
In one bowl, add your eggs and whisk. In another bowl, add your panko and season with the 1 tsp salt, 1 tsp chili powder, pepper, 1.5 Tbsp of onion powder, garlic powder and paprika. Mix the spices.
Shake off excess flour from the tofu, coat in egg and then panko. Place on a parchement lined cookie sheet, and coat the remaining tofu.
Place in the oven for 20 minutes, and flip halfway through.
For the sauce: mix together the mayo, sour cream, chipotles in adobo sauce, lime, garlic and garlic powder.
Serve hot, with the sauce, and enjoy!
