Spicy Peanut Noodles 🌶 🥜 w/ Chili Shallot Garlic Crisps and Tofu

Okay you know those wontons with peanut sauce? This is basically that, in noodle form, with tofu. It’s savory, spicy, creamy, and delicious. The shallot garlic crisps put this over the top and are 100% worth it. I hope you give it a try!

Tofu:
Ingredients:
1 block extra firm tofu
2-3 tbsp soy sauce
1 tbsp maple syrup or honey
1-2 tbsp corn starch
Directions:
Press your tofu for 10-20 minutes. Cut into cubes and mix with the soy sauce and maple syrup. Coat in corn starch and bake at 375 for 10 minutes. Flip and then bake 10 more minutes.

Chili Shallot Garlic Crisps:
Ingredients:
2 medium shallots, sliced thin
10 cloves garlic, sliced thin
Red pepper flakes to taste
1 cup neutral oil (avocado, peanut, vegetable, canola)
Directions:
Heat your oil on the stove on medium high in a pot. Once hot, add in your shallots. Watch carefully. Once they’ve begun to turn golden brown, add in red pepper flakes and garlic. Cook in the heat for 1-2 minutes and remove. Let it rest while you prepare the sauce.

Spicy Peanut Noodles:
Ingredients:
1/2 cup creamy peanut butter
1/4 cup light soy sauce
2 tsp honey
1-2 tbsp gochujang or sriracha
2 tbsp sesame oil
2 tbsp rice vinegar
1 tbsp grated ginger (or one frozen cube)
1/4 cup water
Noodles (ramen, rice, anything you like)
Optional: red pepper, scallions, and peanuts for garnish
Directions:
Mix together the peanut butter, soy sauce, honey gochujang/sriracha, sesame oil, vinegar and ginger. Add the water a little at a time until smooth and creamy.
Prepare your noodles.

To compile:
Once the noodles are ready, drain and add back into the pot(turn the pot off). Add in some red peppers and your tofu. Pour in your sauce, adding in a little at a time. Put on your plate/bowl, top with the crispy shallot garlic oil, scallions and peanuts. Enjoy!
