Spaghetti and meatballs, sloppy Joe’s, meat sauce. All the tomato based meat sauce dishes are incredible. How much better when you get shredded chunks of beef and it cook itself in the crock pot? This recipe is easy, super flavorful and so satisfying. I hope you give it a try!

Ingredients:

~1-2 lbs cubes of beef

~salt and pepper

~1 onion, chopped

~1 cup carrots, chopped

~1 cup celery, chopped

~4 cloves garlic, minced

~3 tbsp tomato paste

~2 tbsp beef consommé

~28 oz crushed tomato

~1.5 cups water

~1 cup red wine

~1 tbsp dried thyme or 3 fresh sprigs thyme

.

Directions:

~Dry and season your beef with salt and pepper. Heat 2 tbsp olive oil over high heat(I do this directly in the crock pot), sear the beef until golden brown. Remove the beef, along with the juices, and add in an additional tbsp olive oil.

~Lower the heat to medium, and add in the onions and garlic, sauté for ~2 mins until fragrant and soft. Then, add the celery and carrots. Sauté for 5 minutes

~Add in the remaining ingredients. Add the remaining beef. Bring up to a simmer and then put the crock pot on low for 6-8 hours, high for 4-6 hours.

~Once finished, shred the beef in the sauce. It should be soft enough to shred with 2 forks.

~Serve over a thick pasta like papardelle or rigatoni. I highly recommend tossing the pasta with the sauce before serving.

~Top with chopped parsley and enjoy!!
