Shredded Crispy Orange 🍊 Chicken

True homemade Chinese food, just crispy and delicious. No, it’s not healthy, but wow it is delicious! I hope you give it a try.
Ingredients:
Chicken marinade and coating:
1-2 lbs thin cut chicken cutlets
1 small onion
3 cloves garlic
4-5 slices ginger
1 tbsp light soy sauce (If you only have full sodium soy sauce, use 1/2 tbsp soy sauce and 1/2 tbsp water to dilute)
1 cup potato or corn starch
1/4 cup orange juice
Sauce:
3/4 cup honey
1/4 cup + 2 tbsp light soy sauce (if you only have full sodium, use 1/8 cup and 1 tbsp of soy sauce and 1/8 cup and 1 tbsp water)
1/2 cup water
1 heaping tbsp Hoisin sauce
1/2 tbsp rice vinegar
1 tbsp sesame oil
1/2 cup orange juice
Orange peel
Optional: 1 tsp red pepper flakes
5 tbsp Corn starch
6 tbsp water
Canola/vegetable oil

Directions:
Start by cutting your chicken into thin, small strips. You want to get optimal crispness here! Set your chicken aside.
Using a food processor or immersion blender, blend your onion, garlic and ginger until it creates a paste. Pour over your meat, and add your soy sauce and orange juice. Mix and set aside for ~20 minutes.
In the meantime, mix together your sauce ingredients into a bowl, excluding the corn starch and water. Cut a little of the peel of an orange, trying to avoid the white. Slice into thin strips and place into the bowl. Set aside.
In a large pan or a pot, add 1 inch of oil. Heat to high heat.
While the oil heats up, dust 1/2 cup corn starch over the chicken and mix. Once the oil is hot, dust the remaining 1/2 cup of corn starch over chicken and mix.
Add your chicken in batches, making sure not to overcrowd the pan. Fry for 3-4 minutes and remove onto a paper towel lined tray. Continue until all is fried.
Once finished frying, either remove the oil or heat a new pan. Add in your sauce mixture. While it comes to a boil, mix the corn starch and water in a bowl. Once the sauce is boiling, add in the corn starch slurry one tbsp at a time and mix until the sauce is thick. Mix in the chicken.
Serve this hot, with scallions, extra orange peel slices and sesame seeds on top. You won’t regret this one!
