Scalloped Potato Chicken 🍗

Chicken is one of my favorite foods, but it can be hard to come up with new ideas for Shabbat chicken. This recipe is a 2 in 1, side dish and protein recipe. You only get one dish dirty and it reheats beautifully. The chicken is tender end juicy and the potato’s melt in your mouth. Make this and I promise you’ll have anyone who tries it begging for more.
Ingredients:
4-5 potato’s, sliced 1/2 inch thick
2 onions, sliced
3-4 shallots, quartered (optional)
1 cup mayo
1/2 cup veggie broth
3-5 cloves garlic, crushed
1 tbsp Paprika (I usually mix regular and smoked)
1 tbsp Garlic powder
1 tbsp Onion powder
Salt
Pepper
Chicken thighs and legs

Directions:
Preheat oven to 375.
Slice your potato’s and onions. Place them in a deep and wide baking dish. Mix the mayo with the spices (to taste) and garlic. Whisk in the broth until the mayo is more liquidy but still a viscous mixture. Pour over potato’s and mix until every onion and potato is coated. Cover with aluminum and bake for 40 mins.
Remove from oven. Place chicken on top, drizzle with olive oil and sprinkle with paprika, garlic powder, onion powder, salt and pepper. Coat the chicken. Cover. Bake for 60 mins covered, 30 mins covered. Enjoy!
