Roasted Cauliflower w Herbed Yogurt

I love cauliflower and have been working really hard to come up with some new, creative ways to prepare cauliflower. Here you have it! Cauliflower reinvented!


Ingredients: (serves 2-3)

2 heads of whole cauliflower

Olive oil

Salt

1 cup parsley

3 stalks scallions

1 tbsp lemon juice

1 clove garlic

Pepper

1 cup yogurt (I used plain yogurt, but you can use Greek yogurt or non dairy yogurt instead)

Toasted buckwheat

Everything but the bagel seasoning

Preheat your oven to 400.

Cut the root out of your cauliflower, but keep it intact. Slice it in half and then in half again, until you have 4 wedges of cauli. Place on a baking tray with parchment, coat in olive oil, sprinkle with salt and place in the oven. After 20 minutes, flip each wedge and bake for another 20 minutes.

In a bowl or food processor, add the parsley, scallions, lemon juice, garlic, yogurt and pepper. Either blend in the food processor or use an immersion blender.

Once the cauliflower is finished, and is golden brown on both sides, plate it up!

Place the cauliflower on a plate, drizzle with the yogurt sauce, sprinkle the buckwheat and everything bagel seasoning. Enjoy!
