Protein Packed Carrot 🥕 Pancakes

I LOVE pancakes but I’m trying to lighten up and feed my body nutritious and well-balanced food. I have a thing for carrot cake and decided to experiment with carrots to make these very filling, much more health conscious protein pancakes.





Ingredients:

1.5 cups grated carrots (grate them over the measuring cup, right into the bowl you’ll use for the batter)

2 cups old fashioned oats

6-8 oz Greek yogurt (vanilla flavored or plain works)

1/2 cup protein powder (again, vanilla flavor works well!) 1/3 cup silan (you can sub for agave or maple syrup here)

4 egg whites

1 tsp vanilla

1 tsp cinnamon

1 tsp ginger powder

1/2 tsp nutmeg

2 tsp baking powder


Optional:

1/2 cup Greek Cream Cheese

2 tbsp maple syrup

1 tsp vanilla


Directions:

Mix everything OTHER than the cream cheese, maple syrup and additional tsp vanilla into a bowl. Use either a blender or immersion blender to mix together. If using immersion blender, it will be tough at first and then when the egg whites and carrots break down, it will become more of a batter. Mix until combined.

Heat a pan on medium heat and spray with cooking spray. Place about 1/3 cup of batter into circles on the pan. Cook until the edges start to look cooked and bubbles start to form on top of batter, about 3 mins. Flip and cook additional 2 minutes. Remove from heat.

Mix the cream cheese, maple syrup and vanilla in a bowl. Microwave for 30 seconds, or until cream cheese is soft enough to mix. Mix together and drizzle a little over the pancakes. If you’re not into the cream cheese, top with maple syrup or some berries! I hope you enjoy my take on carrot cake protein pancakes!
