Pistachio Crusted Fish

I love fish and usually go very simple, with lemon, garlic and salt. This recipe was inspired my MIL and her pistachio filled chicken. It is a really fun way to change up your usual bread crumb crust, and adds a really nice color to your plate as well! Plus, it’s super easy and delicious. If you like pistachios and pesto is your jam, you’ll love this topping!

Ingredients:
2 cup pistachios (I used salted, but then don’t add any salt)
4 tbsp basil (fresh or frozen works)
4 cloves garlic
3/4 cup French fried onions
1 tsp salt
Pepper to taste
1-2 lbs fish (any fish works. Salmon, flounder, Bronzino etc)
Directions:
Preheat oven to 375.
Place all the ingredients into a food processor. Pulse until everything is broken down and crumbly.
Place your#fishin an even layer on a cookie sheet. Pat dry with a paper towel. Spoon some of the pistachio mixture onto each piece of fish. Use your hands and make sure that there is a nice coating on top if each piece. Spray the top with olive oil spray. You can do this for chicken as well, just cook accordingly.
Bake for 15-20 mins, until the fish is cooked through and the topping is#crispyand enjoy!
