Pasta in Tomato Cream Sauce

I LOVE a fresh tomato sauce. But every once in a while, I want something a little more decadent and creamy. I created this sauce for just this purpose, and MAN was it a hit! This is an easy, satisfying and delicious creamy tomato sauce, bound to make your entire family happy!





Ingredients:

2 tbsp olive oil

2 onions, chopped roughly

12 cloves garlic, sliced

10 larger (plum, beefsteak etc) tomato’s, cubed

1 pack small tomatoes (cherry)

1 can tomato sauce

1 cup heavy cream

1/2 cup shredded Parmesan

Red pepper flakes

Oregano

Salt and pepper


Directions:

Add 2 tbsp olive oil to a pot. Once hot, add the chopped onions. Sauté until soft and translucent. Add the garlic and sauté until soft and fragrant. Add in ALL the tomatoes. Allow for it to simmer until most of the tomatoes have broken down and the sauce starts to become liquidy.

Add your tomato sauce, stir. Blend together with an immersion blender (or leave chunky, that works too!). Once blended, add the heavy cream (you can sub with milk for a lighter version) and cheese. Stir.

Add the seasonings to your taste and let sauce heat up once again before serving.

Prepare your pasta however you like (I think this is best with long pastas like fettuccini, angel hair or papredelle, OR penne will work too!). Mix the sauce with your pasta as desired, serve with fresh cracked pepper ontop and some extra Parmesan for good measure.

Alternatively, you can use this as a pizza sauce for a more creamy tomato variation!
