Official Boba Recipe

Bubble tea is a trendy, Asian milk tea drink with small pearls of chewy and sweet tapioca floating on the bottom. They are sold all over NYC, most are vegan but none are kosher! I finally experimented with different recipes and found the best way to make boba at home!

Ingredients:
1 cup tapioca flour/starch, 1 tbsp for kneading
1/2 cup BOILING water
1-2 drop black food coloring (optional)
2 cups brown sugar
Black or green tea
Your fave milk
Directions:
Pour your tapioca flour into a bowl with the black food coloring. Pour in the very very hot water and mix rapidly with a fork or spatula. You have to mix quickly here or it will not combine properly. Once it’s cool enough to touch, pick up the dough and begin kneading until it is will combined. Add more tapioca flour if the dough is sticking to your hands.
Roll out the dough into logs and break into small pieces. Roll into little balls (this part is a little tedious but it’s a fun activity to get the family involved). Bring a small pot of water to a boil, filled about 3/4 of the way. Add in 1 cup of brown sugar once it is boiling. Add the boba balls and boil for 2-3 mins, until soft but chewy.
Remove and put into a bowl with 1/2 cup hot water and 1 cup of brown sugar. This will keep the boba soft and also coat it in a delicious syrup.
Make 1/2 cup of your favorite tea (black or green works best for this). Brew with cold water. Add ice and milk, stir. Pour a few spoonfuls of boba into the bottom of the cup of tea. Enjoy!
These really require a special straw so either get some boba straws (which are huge and so fun) or make your pearls very small!
