Roasted chicken thighs are so delicious. But I always find that I end up making the same few recipes on rotations. The flavors in this chicken are sweet, savory and perfectly umami. It is 6 ingredients and so so easy to make. I hope you give it a try!

.

Ingredients:

4 chicken thighs

1/2 cup white miso paste

2 tbsp honey

1 tbsp rice vinegar (unseasoned)

2 tbsp avocado oil

Black pepper

.

Directions:

Preheat oven to 425.

Place the miso paste, honey, vinegar and avocado oil in a large bowl. Mix together until smooth and combined.

Add your chicken thighs. Coat in the paste and place in a baking dish in an even layer. Sprinkle some black pepper over the top.

Bake for 30-40 minutes, until you reach an internal temp of ~165 and the top is golden and crispy. Enjoy!

Tips:

✨ You can marinade this for up to 6 hours in advance.

✨ You can use this as a marinade for grilled chicken and use boneless chicken breast or boneless chicken thighs.

✨ The more marinade you spread over the top of the chicken, the more flavor there will be on the skin. But don’t over do it, or it will be too intense!
