Meghan Markle’s Zucchini Pasta

If you know my page, you know I love pasta. You also know that I love tomatoes with my pasta. But I wanted to try something new! I was inspired by Meghan Markle's recipe for, what she calls, her filthy sexy mush. This is a perfect summer pasta and a great dish to throw on your stove first thing in the morning. It is light but packed with veggie and flavor. This is one you’ll definitely want to try!





Ingredients: (Serves 6 people)

6 zucchini

2 tbsp onion soup mix

3/4 cup water

Pepper

Red pepper flakes

Parmesan cheese

Long noodles (any kind you like)


Directions:

Chop off the ends of your zucchini. Cut them in half, lengthwise. Then cut them in half, lengthwise, again. Then, chop zucchini into chunks. These do not need to perfect, or specific in shape.

Place the zucchini in a medium sized pot. Sprinkle the soup mix and water. I would start with 1/2 cup and add later on in the process if you feel it is necessary. Stir over medium heat, until the soup mix is dissolved and the zucchini starts to sweat.

Turn down the flame to low, cover and let them simmer for 3-4 hours.

After 3-4 hours, boil your pasta.

While the pasta boils, add pepper, red pepper and Parmesan to the zucchini, to your taste. The black pepper truly enhances the flavor, so don’t skip!

Mix the pasta with your sauce. 1-2 large scoops of sauce is enough for each serving of pasta. The sauce should coat the pasta but not be TOO SAUCY! We want a velvety coating of zucchini on the pasta and the flavor will carry through in every bite.

For extra punch, add a little more cheese and pepper on the top of your pasta. Enjoy this inventive and extraordinarily delicious pasta recipe!
