Lemon 🍋 Onion Grilled Chicken w/ Cauliflower Parsnip Mash

I live for these fresh flavors when spring comes around. The lemon with the onion soup flavor is just so savory and satisfying. Plus, you get your veggies in with this mash. It’s the perfect spring dinner and it’s pretty easy to make too. I hope you give it a try!

Ingredients:

~1 lb chicken (cutlets or dark meat)

1/4 cup olive oil

1 lemon

1/4 cup onion soup mix

8 cloves garlic

1 onion, chopped

2 parsnips, peeled and chopped

1 head cauliflower, chopped and cleaned

1/2 cup broth

Salt to taste

Pepper to taste

For the chicken:

Place your chicken into a bowl. Add in your olive oil, the zest and juice of your lemon, the onion soup mix, 4 cloves crushed garlic and black pepper to taste. Mix together and grill. You can also sear the chicken for a nice crust and then pop it in the oven at 375 for 25-30 mins to finish cooking. This method will work just as well.

For the mash:

Sauté your onions with a little olive oil over medium high head. Once soft, ~4 minutes, add in your 4 cloves of sliced garlic. Sauté for 1 minute, until fragrant. Add in your parsnips and cauliflower. Mix together and add in your broth. Lower your flame to a simmer, cover with lid and let steam for 20 minutes. Remove from heat, season with salt and pepper to taste and blend together with immersion blender. Serve hot with your chicken and enjoy!
