Kadai Paneer Masala (Tomato 🍅 Indian Curry)

You either love Indian food or you don’t. But it has such a special, warm, unique flavor to it that I just love and crave so much. This is a very mild curry, and if you like Indian food, you’ll definitely want to give this one a go!

Ingredients:

1 block halloumi cheese

1 onion

1 green pepper

3 large tomato’s (I used beefsteak)

1 bunch parsley

1 jalapeño

2 cloves garlic

1 slice ginger

1 tsp salt

2 tbsp oil

1 tbsp curry powder, garam masala, coriander, garlic powder, onion powder

1 tsp ginger powder, tumeric and salt

1 can whole fat coconut milk or coconut cream


Directions:

Cube your cheese. In a frying pan, heat up a little olive oil. Place the cheese into the frying pan and sear on each side (or almost each side) until golden brown. Remove from heat and set aside.

In a pot, add in a little olive oil. Chop your pepper and onion roughly and add them in. Sauté until soft. Add in allll the spices, mix and allow to toast ~2 minutes.

In a blender or food processor, pulse the tomato’s, parsley, jalapeño, garlic and 1 tsp of salt until fully broken down. Add the tomato mixture into the pot with the peppers, onions and spices. Mix together.

Allow for the mixture to simmer and reduce for 10 minutes or so, then add the can of coconut milk. Allow to simmer for additional 5-10 mins until your desired consistency is reached.

Once the mix is your desired thickness, add in your cheese. Top with some cilantro or parsley and enjoy!

Extra tip: garlic naan is killer with this. Don’t skimp out if you have the energy to make homemade naan, or just buy it and warm it up in the oven.
