Instant Pot Birria Tacos 🌮

Okay, I know I make tacos A LOT, but hear me out. These are so different, they have such a unique flavor to them, and they are addictive. They have some spice, but its such a flavorful spice that it doesn’t even matter. Plus, you can eliminate some of the spice. Either way, these are so special, you gotta give them a try!

Ingredients:

3 chili de arbol, 3 guajillo chilis, 3 ancho chilis

2 Tbsp olive oil

1.5-2lbs chuck meat

salt and pepper to taste

1 onion, sliced

6 cloves of garlic, minced

2 bay leaves

1 small stick cinnamon

2 tsp oregano

1.5 tsp cumin

1 tsp coriander

2 tsp tomato paste

3 cups chicken broth

2 Tbsp apple cider vinegar

1 Tbsp soy sauce

1 tsp hoisin sauce

1 white onion, minced

Cilantro, chopped

Daiya cheese, Lime and Corn tortillas

Directions:

Cut the tops off your chilis and shake out all the seeds. Discard the seeds.

Turn your instant pot on saute mode and turn it on the highest heat. Toast your chilis for 4-5 mins, until fragrant. Remove and add in 1 Tbsp of olive oil. Add in your meat and season with s&p. Cook for 4 minutes per side and then remove.

Add additional Tbsp of olive oil and your onions. Saute for 3-4 minutes, until softened. Add your garlic, bay leaves, cinnamon, oregano, cumin, coriander, tomato paste and mix. Add 1 cup of broth and scrape the bottom of the pot with a rubber or wooden spoon. Add in the remaining broth, the vinegar, soy sauce and hoisin. Mix and then add you chilis back in. Make sure they are covered in broth and then add your meat back in. Cover and cook on high pressure for 40 minutes.

For the salsa, just mix the onions, cilantro and some lime juice.

When the broth is finish, release the pressure and remove the beef. Shred the meat, and set aside. Remove the bay leave and cinnamon, add 1 cup broth and then blend together everything in the pot.

To assemble, heat a frying pan on high heat. Dip your tortilla into the broth, drip off excess and place on pan. After 1-2 minutes, flip. Place your cheese on the tortilla, then the meat and then fold. Remove from the plan, add your onions. To eat, dip into the extra broth topped with some onion salsa. Enjoy!
