Heirloom Tomato Salad

This summer salad is fresh, delicious and easy. I love tomatoes in all forms, but this simple salad highlights tomatoes and brings out their flavor in the most amazing way. If you love tomatoes, this is a must-try.

Ingredients:
5-6 tomatoes (I found heirloom. If you can’t find, just use a variety of sizes and types of tomatoes)
Drizzle of good quality olive oil
Sprinkle of textured salt (maldon, course or sea salt)
Fresh cracked black pepper
Zest of one lemon
Grated Parmesan
(Optional) Pesto
Directions:
Slice the tomatoes in 1/2 inch thick slices. Place on a platter, it’s okay to overlap them!
Drizzle a little olive oil over the tomatoes. Sprinkle salt and pepper to make sure that each tomato has a little of both. Grate the Parmesan right over the tomatoes to your liking. Grate the lemon zest as well, making sure not to zest any of the white part of the lemon rind (that part is bitter). Drizzle some pesto, if you have or want.
