Halloumi Fries 🍟 w/ Pomegranate Syrup and Zaatar Yogurt

If you’ve never tried halloumi before, it is a semi-soft cheese with a very mild flavor. This makes it perfect for building flavor! Another halloumi fun fact: it doesn’t melt when heated up. This makes it perfect for salads and stir fry recipes. Today, I was inspired by a store in London called Oli Baba, and I made these middle eastern halloumi fries with a sweet and sour kick! I hope you give it a try!

Ingredients:
16 oz pomegranate juice
3 tbsp maple syrup
Halloumi
1/2 cup oil
Sumac
1 cup Greek yogurt
1 clove garlic
1/4 cup Zaatar
Pomegranate seeds
Fresh mint
Chili pepper flakes

Directions:
Start by making your pomegranate syrup. This can be done is advance to save time. Place your pomegranate juice and maple syrup in a small pot. Place over a medium high flame. Bring to a rolling boil and allow to boil for 5 minutes. Lower the flame to medium low and allow to slowly boil until reduced by 2/3. Allow to cool and you should have a thick, bright syrup.
Now, cut your halloumi into even strips. Heat your oil over medium high heat. Add your halloumi and allow to turn golden brown, flipping until all sides are golden. Remove onto a paper towel lined cookie sheet and sprinkle with your sumac.
In a bowl, mix together the yogurt, crushed garlic and Zaatar.
When all the fries are finished cooking, compile:
Place your fries on the bottom. Drizzle with the yogurt and some syrup. Then, sprinkle some pomegranate seeds, mint and red pepper flakes. Enjoy hot!
