Four Cheese Mac and Cheese 🧀

I’ll admit, Wacky Mac is my guilty pleasure and one of my favorite childhood foods. But when I want something a little more sophisticated and a little less artificial, this is what I make. These 4 cheeses specifically make this Mac and cheese super balanced. I hope you give it a shot.
Ingredients:
1 box of your favorite pasta, boiled al dente
4 tbsp butter
4 tbsp flour
2 cups milk
1/2 cup of shredded mozzarella, cheddar, Muenster and Parmesan ( a total of 2 cups), plus extra for topping
Salt and pepper to taste

Directions:
Preheat your oven to 350.
Heat a medium pot to medium low heat. Melt your butter but make sure you do not burn it. Once completely melted, stir in your flour. Whisk continuously until it turns into a smooth paste- this is called a roux.
Raise the heat to medium and add the milk in in 1/2 cup increments. Stir until it becomes smooth and creamy.
Mix in the cheeses and season with salt and pepper.
Pour the sauce over your pasta and mix until fully coasted. Top with a sprinkle of mozzarella and Parmesan. Bake for ~10 mins until the cheese is nice and melty over the top. Serve hot, with extra Parm and fresh pepper. Enjoy!
