Fresh, light, healthy dishes scream summer to me! This is a super classic dish in terms of flavor profile, but it makes for a very delicious and easy dinner. I hope you give it a try!
.
Ingredients:
1 lb flounder
1/2 cup flour, seasoned to your preference (I used garlic powder, paprika, salt and pepper)
Olive oil
1 shallot, chopped
4 cloves garlic, sliced
1 cup white wine
1/2 cup vegetable broth
1 lemon
3-4 tbsp capers
.
Directions:
Mix your flour with your seasoning. Pat your fish dry and coat in the flour, dusting off any excess.
Heat a little olive oil over medium high heat. Add in your fish. Sear until golden brown and flip. Remove when both sides are golden.
Add in your shallots. Sauté until soft and golden brown. Add your garlic, and sauté for 1-2 minutes. Pour in your wine and broth. Bring to a simmer and allow to reduce a bit.
Once reduced, add your lemon juice and capers. Season with salt and pepper. Mix. Nestle the fish back into the sauce. Bring back to a simmer and then then off heat. Serve and enjoy!
Tips:
✨ You can make this with chicken. Just adjust the cooking time, cooking the chicken until you reach an internal temp of ~165.
