Eggs Benedict

This is my absolute favorite indulgent breakfast/brunch recipe. The perfect runny egg topped with lemony and buttery hollandaise makes the perfect decadent meal. Make sure you have some fresh eggs, some juicy lemons and some softened butter, and this will make for your new favorite!





Ingredients:


For poached eggs:

Eggs (however many you want to make)

2 tbsp distilled white vinegar

Salt and pepper

Toasted bread, whichever kind you like!

Paprika for garnish


For Hollandaise:

3 egg yolks

1 tbsp water

1/2 lemon, juiced (equal to about 1 tbsp)

1 stick butter, cubed

Salt, pepper and cayenne to taste


Directions:

Bring a pot of water to boil with vinegar. While that is boiling, line a plate with paper towels.

Start boiling another pot of water, a small one, on medium low heat. Make sure that you have a heat resistant bowl and that you can place it on top if this pot, without it touching the water. In that bowl, off the heat, mix the yolks, lemon and water together. Set aside.

Your large pot of water should be boiling by now. Crack one egg into a small bowl/measuring cup. Using a slotted spoon, mix the water into a whirlpool and gently drop the egg into the center. Allow for the white to solidify. After 2-3 minutes, remove. Place on paper towel and sprinkle with salt and pepper. Repeat with remaining eggs.

Now, we begin our sauce. Add a few cubes of butter to your lemon yolk mixture. Place over the small pot of boiling water—this is called a double boiler. Start mixing with a whisk without stopping until ready to serve. As the butter melts, add a few more cubes at a time. Keep whisking, and add remaining.

Keep whisking until the sauce starts to thicken. If at any point, you see the eggs starting to scramble, remove the bowl from the pot and whisk in a few drops of cold water. Try not to let this happen 😊 Lower the flame and keep whisking until the sauce is viscous and thick. This should take 5-10 minutes. Remove from the heat, add salt, pepper and cayenne. If it feels a little thick, you can always add a little water. Place an egg on top of the bread, top w Hollandaise and sprinkle paprika. Enjoy!
