Easy Baked Falafel

Every now and then I get a craving for some Israeli cuisine. But I never want to compromise health for flavor. Here is a healthy, baked, flavorful falafel that is super easy to whip up and will satisfy that craving!

Ingredients:
2, 15 oz cans of chickpeas, drained and rinsed well
1/2 cup chopped onion
1 cup chopped parsley
6 cloves garlic
2 tsp ground cumin
2 tsp ground coriander
1 pinch cayenne
2 tsp salt
2 tbsp olive oil or avocado oil
4 tbsp lemon juice
1 tsp baking soda
6 tbsp oat float, almond flour or almond meal flour
Cooking spray
Directions:
Preheat oven to 400.
Put chickpeas, onion, parsley, garlic, Coriander, cumin, cayenne, salt, olive oil and lemon juice in a food processor. Blend. Be careful, do not blend too much or you’ll have hummus. You want there to still be some chunks of chickpea, but for everything to be well incorporated. By hand, mix in the baking soda and the flour.
Line a cookie sheet with parchment paper. Spray with cooking spray. Mold the falafel batter into relatively small round and flat patties, about 1/2 the size of your palm. Make sure they still have a little height to them. Put them on the cookie sheet. Spray the top of the falafel as well.
Bake in the oven for ~20 mins per side, or until they are turning golden brown and become more uniform.
Sprinkle with salt straight out of the oven.
Serve with Israeli salad 🥗 , in pita 🥙 , with hummus, over a rice bowl 🍚 , whatever you can think of! These are delicious and packed with protein. Enjoy!
