Crunchy Cucumber Blueberry Summer Salad w/ Creamy Balsamic Dressing š„ š« š„

I love a fresh tasting salad with a bit of crunch and tang in the summer. In this insane heat, I just needed something cool and delicious tasting. This salad was so quick and so filling, perfect for the summer and so light! I hope you try it out!

Ingredients:
Spring mix or your fave greens
3-4 mini cucumbers, sliced thin
4 green onions, sliced thin
1 cup blueberries
[2/3 cup sliced almonds and 2-3 tbsp sugar] or [candied almonds]
Grilled chicken with salt and pepper (either fresh or leftover)
1/4 cup balsamic vinegar
1 clove crushed garlic
2 tsp Dijon mustard
2 tbsp mayo
2 tsp honey
Salt and pepper to taste
1/4 cup olive oil
2 tbsp fresh chives, minced
2 tbsp water or more for thinning

Directions:
Grill your chicken if you are making it fresh. Chop all your veggies.
To make the candied almonds, add your sugar to a frying pan or sauce pan on medium high heat. Add your sliced almonds and mix around. Constantly stir until the sugar begins to dissolve. Make sure the almonds are coated in the melted sugar and remove onto a plate or parchment paper. Allow to cool.
To make the dressing, add your balsamic, garlic, Dijon, mayo, honey, salt, pepper, olive oil and chives. Thin with water until it is smooth but still thick.
Add your spring mix to your bowl. Top with cucumbers, scallions, blueberries, grilled chicken, and candied almonds. Dress and mix. Enjoy!!
