Coconut Fish Tacos 🌮 w/ Mango 🥭 Salsa & Cabbage Slaw

Taco Tuesday! The best day of the week! We love the endless ways you can prepare tacos and the type of flavors that can be included. The sweet, spicy and savory in the recipe compliment each other so beautifully. This is a regular on our rotation, I hope you give it a try and love it as much as we do!
The recipe for the fish is from @rachlmansfield google it. I prefer cod specifically for this recipe. It holds together better than flounder and is the perfect size for tacos.

Mango Salsa: (taught to me by @shaniemilhem )
Ingredients:
2 mangos
1 jalapeño
1 red onion, chopped very fine
2 tbsp of olive oil
1 lemon, juiced
Paprika

Directions:
Chop the mango into small chunks and place it into a bowl. Add in finely chopped jalapeño (make sure you wear gloves for this and remove seeds if you want it more mild), chopped red onion, olive oil, lemon juice and a nice amount of paprika. Mix together and add more paprika is necessary- you are looking for a nice red tint.

Cabbage Slaw:
Ingredients:
1 bag of your favorite cabbage mix
1/2 cup mayo
4 tbsp apple cider or red wine vinegar
2 tbsp agave or maple syrup or honey
2 tbsp your favorite hot sauce. I like the chipotle @tabasco
1 cube frozen cilantro or parsley
Pepper to taste

Directions:
Place the cabbage in a bowl. In a smaller bowl, mix together the mayo, vinegar, sweetener, hot sauce, frozen herbs, salt and pepper. Dress the cabbage to your liking.

To compile:
Toast your tortilla on an open flame. This is key and adds to the Smokey flavor.
Spoon a little cabbage slaw on the base, place a few pieces of fish, top with mango salsa and @traderjoes green dragon hot sauce. Finish with some fresh lime and enjoy!
