Carne Asada Tacos 🌮 w/ Pico De Gallo 🍅 and Corn Salsa 🌽

You guys already know how I feel about taco Tuesday’s. But I love taking a few simple, fresh ingredients and making it into an easy and super delicious meal. This 3-part taco is full of flavor and so simple to put together. I hope you give it a try!

Ingredients:
1 lb flank/strip steak
1 orange, juiced
1 lime, juiced
1 small jalapeño, minced
4 cloves garlic, minced
2 tbsp olive oil
Salt
Pepper
Cumin
Oregano
Chili powder
3 plum tomato’s, chopped
1/2 sweet onion, chopped
1 small jalapeño, minced
1 lime, juiced
Cilantro (optional)
1 cup fresh corn
1/2 lemon, juiced
1 tbsp agave/honey
1 tsp Paprika
1 tsp Chili powder
Tortillas

For the meat🥩 :
Place your steak in a baking dish or in the bowl of your instant pot. Add in the orange juice, lime juice, jalapeño, garlic, olive oil, salt, pepper, cumin, oregano and chili powder. Season evenly over the top of the meat, to taste. Mix together. For the oven: bake at 350 for 15 minutes or until cooked through. For instant pot: cook on high pressure for 12 minutes and release pressure immediately. Slice your meat and place back in the sauce for serving.
For the Pico de Gallo 🍅:
Place your chopped tomato, chopped onion, minced jalapeño and lime juice in a bowl. Add cilantro if you like it. Mix and serve!
For the corn salsa 🌽:
Place the corn, lemon juice, agave/honey, paprika and chili powder in a bowl. Mix together and serve!
If you’re using corn tortillas, toast them on an open flame or warm them in the oven for best flavor. Compile your tacos 🌮 and enjoy!!
