Cacio e Pepe:
This recipe is so delicious, and so simple. It relies on using very few ingredients but using them perfectly! I hope you give this a try, it has become my go-to when I have nothing but these ingredients in my house.

Ingredients:
1 box spaghetti, cooked Al Dente
3-4 cloves garlic, sliced
1-2 tbsp butter or earth balance
1/2 cup Parmesan cheese, extra for serving
30-40 cracks of black pepper, extra for serving
1 cup preserved pasta water
Directions:
Cook your pasta in super salty water. When your pasta has ~5 minutes left, heat up a pan to medium heat with your butter. Once melted, add the sliced garlic and allow to soften. Once the pasta is cooked, add the pasta directly into the pan with the garlic. Add in the cheese and the pepper and mix to combine. Using the preserved pasta water, pour a little at a time (I used 1/2 cup) to loosen the cheese and the pasta, and to make it a whole sauce. Once the pasta is coated and glossy, but still a little thick with the cheese, crack 30-40 cracks of black pepper and mix. Remove from the pan and plate it up! Add some extra Parm and pepper for serving and enjoy this super simple but super satisfying pasta dish!
