Butternut Squash Soup

Nothing better than a bowl of butternut squash soup on a rainy fall night! This soup is thick and delicious, it fills every craving and its just so easy to make!

Ingredients:
1 whole butternut squash peeled and cubed ( you can buy these precut at the grocery store if you’re looking to make your life easier)
3-4 sweet potatoes peeled and cubed (depending on size. If they are large, stick to 3)
1 while onion, chopped roughly
Handful of whole garlic cloves ( I buy mine pre peeled. Also, I like a lot of garlic. Start with 6 cloves, if you love garlic, up it to 10-12)
1 container of vegetable broth
I can of coconut milk
1 Tablespoon of smoked paprika
1 tablespoon of black pepper
2-3 tablespoons of salt
Pinch of cayenne ( a little goes a long way. I love spice so I add about a teaspoon. Add a little, taste it, add more to your taste if you deem necessary)
Instructions:
Add all the cut veggies into a pot, instant pot or crock pot . Pour in the veggie broth. It should come close to covering the veggies but it doesn’t need to. If you feel you need more liquid, add a little bit of water. Boil over medium heat until the vegetables are tender and can be poked with a fork very easily. For stove top, this will take about 40 mins. For crock pot, this will take about 2-3 hours.
Once vegetables are tender, blend with immersion blender, or pour into food processor if you don’t have a handheld. Blend until smooth and fully combined. Add can of coconut milk and spice, mix or blend again.
Here is when you taste it and adjust according to your taste preferences.
Keep it on a very low flame until ready to serve. I always add extra cayenne when serving, but again, up to you.
This is a thick soup, so prepare your meal accordingly. It is quite filling, perfect for fall and winter. It refrigerates really well and gets better every single time you reheat!

If you use a crock pot, turn temp down to low. You can serve this up to 20 hours later and it will become caramelized and delicious. This is my favorite way to serve it.
