Barley Air Fried Arancini 🥕 🍚

I had a million ingredients in my fridge to use up before Passover. So this is what I came up with! A barley veggie filled and air fried arancini balls. Savory, delicious and helping me clean out my fridge, one ingredient at a time!

Ingredients:

1 small onion, chopped

2 carrots, peeled and chopped

2 stalks of celery, chopped

3 cloves garlic, sliced thin

Salt

Pepper

Dried thyme

Olive oil

1 cup barley

1/2 cup white wine or pale beer

4 cups chicken/veggie stock

1/4 cup nutritional yeast powder or Parmesan

Bread crumbs

In a pot, add in your olive oil. Sauté the onions, carrots and celery until soft. Add in the garlic and sauté for 1-2 more mins.

Warm up your 4 cups of stock.

Add in the dry barley. Mix and season to taste with salt, pepper and dried thyme. Then, pour in the wine or beer. Let simmer until all the liquid is absorbed.

Then, pour one ladle of broth in a time. Continue adding and stirring until all the liquid is absorbed. Stir in the nutritional yeast or parm. Pour the barley onto a parchment lined cookie sheet and spread out. Top with another piece of parchment and refrigerate for 2-6 hours.

Remove from fridge, roll into balls and coat in breadcrumbs.

Air fry at 400 for 20 minutes, until crispy and hot.

Serve with warm marinara sauce and enjoy!
