Avocado Egg Rolls 🥑

Guacamole, an egg roll wrapper and some spicy mayo- 3 things that go wonderfully together. I’ve been making these for years and decided to share the recipe! They can be air fried, baked or even fried for real, but any which way, they’re bound to please your Gen Z and millennial family members no matter what.


Ingredients: (make ~10 egg rolls)

4 medium sized avocados

1 small red onions, minced very small

1/4 cup chopped sun dried tomato’s (you can leave these out if you don’t like them)

1 lime, juiced

Salt and pepper to taste

Spicy mayo for dipping

Directions:

If you are using your oven, preheat to 400.

Start by placing your pitted and scooped out avocados into a bowl. Add in the red onion, sun dried tomatoes, lime juice and salt and pepper. Mash it together but keep it a little chunky. I like to use a whisk to get this consistency.

Take your wrapper, brush water along all the edges and place a spoonful of the avocado mixture into corner. Pull the two adjacent corners over the avocado mix, and then roll it tightly.

To bake:

Place the egg rolls on a baking tray lined with parchment paper. Spray the top with a little avocado oil spray or any

other oil spray. Bake for 20 minutes or so, flipping them when they look golden so that both sides cook evenly.

To air fry:

Preheat your air fryer to 400. Line the bucket with parchment, place in your eggrolls in an even layer and spray the top with oil spray. Cook for 12 minutes and then flip. Cook another 5 minutes and remove.

To fry:

Heat a neutral oil (canola, peanut, vegetable) in a deep frying pan or pot. Once hot, add in the egg rolls. Flip once the bottom side is golden brown and cook until golden on all sides. Remove on to a paper towel lined plate.

Serve them hot, with spicy mayo, duck sauce, sweet chili or your favorite dipping sauce. Enjoy!!
