Artichoke Lemon 🍋 Chicken

Summers here! And that means bright, fresh dishes that taste good and feel good to eat. This savory, citrusy chicken is so packed full of flavor, but it so easy to make! I hope you give it a try, it’s perfect for summer.

Ingredients:

2 lbs boneless chicken thighs

Olive oil

2 shallots, sliced thin

14 Oz can artichoke hearts

3 cloves garlic, sliced thin

1 lemon

2 cups dry white wine plus 1 cup

Salt and pepper

Thyme (fresh or dried)

Optional: 2-3 tbsp coconut cream

Directions:

In a frying pan, heat up a couple tablespoons of olive oil over medium high heat. Season your chicken on both sides with salt and pepper. Add to your frying pan and sear for 3-4 mins per side, until golden brown. Remove from frying pan. Do this until all your chicken is cooked through.

Add a little more olive oil if necessary. Add in your chopped shallots and artichoke hearts. Allow to sauté until golden brown and soft. Add in your garlic and sauté until fragrant, ~1 min.

Add in your white wine and bring to a simmer. Allow to reduce by half. Add in your coconut cream if you are using it, plus the additional cup of white wine. Nestle your chicken into the sauce, season with thyme and cover. Allow to simmer on low for 35 minutes.

Serve hot, with some extra pepper and lemon zest. Enjoy!

Pro tips:

✨You can use white meat cutlets, just cut the cooking time down by 1/3 for each step.

✨ You can use chicken broth instead of white wine if you prefer

✨ You can use dark meat chicken but increase the cooking time by 1/3 for each step

✨ Leave out the thyme and sub your favorite herb if you don’t like thyme
