I don’t know about you but I ALWAYS end up throwing out berries because nobody ate them. An amazing way to use them and preserve them, is by making jam. This super simple, fresh and flavorful recipe is the best, and I hope you use this to save your dying fruit! *this recipe is scaled down to 1 cup. You can always make double or more of this recipe, using the same steps*

Ingredients:
1 cup any berries (I like strawberries or a mix of raspberries, blueberries and blackberries)
2 tbsp water
1/4 cup sugar
3/4 tsp lemon juice (fresh or bottled both work) .
Directions:
Place all the ingredients in a pot. Mix until the sugar is no longer white. Turn the heat to a medium high. Allow for the mixture to come to a boil.
Cover and turn down to low. Leave covered for 20 minutes, checking on it periodically to make sure it doesn’t burn. This step helps to make sure that the fruit breaks down and releases its natural sugars.
After 20 minutes, uncover and raise heat to medium low. This is the babysitting step. Sit and stir the jam every 3 minutes, for 20 minutes. After 20 minutes, take a cold spoon, dip it in the jam and use your finger to swipe some jam off the back. If the jam doesn’t rush back together, you’re done!
Remove from heat and cool. Once cool, store in the fridge. You can freeze for 6-8 months, and it will still taste amazing!
Enjoy with biscuits, on a sandwich, in your yogurt parfait and so much more.
